Dining has always been part of Bryggen. As Bryggen had a long history of damaging fires, there was a ban on all open fires. All food preparation had to take place in separate houses, made with stone rather than wood like the rest of the buildings on Bryggen. Each building had its own "Schøtstue". A schøtstue was an assembly room where you could eat a warm meal, have a party or hold court hearings and the cooking area was build in connection to these assembly rooms. At the restaurant Bryggen Tracteursted you can still enjoy a warm meal in one of the original schøtstue on Bryggen.
